What about the notice in the last screenshot: '1 Automatic Moderation Points'? Will there be any further info about when the threshold will be reached? Like: '1 Automatic Moderation Point (3 left until auto-hide)' or something similar?

I'm not sure if others encounter this, but my reports generally fall into two categories - spam, and "other" (abusive language, double post, user wanting to edit past the time limit, etc.)
Am I understanding the rules parameters right such that I could set a lower hide threshold for posts reported as spam (say, 2 reports for a user with < 10 posts) vs other types (which may warrant more reports to trigger the auto-hide).

I think it's important to understand that really GDPR is about protecting and using data responsibly. My impression is that there isn't a draconian organisation ready to swoop and punish people who are acting responsibly.
I certainly wouldn't fear it. Just review the information out there. Make some notes. Use 4.2.7 to help with your compliance checks.
A great resource is the ICO website. It has some great tips about want to put in a privacy policy - check it out here.
I can't give out "legal" advice here because I am not an expert, but I do want to help where I can.

Yes, the "Sign me up" box can be opt in with Invision Community 4.2.7, which satisfies the consent requirement.
