I have a question and a request.
Can these locations / venues be sorted e.g. alphabetically?

Currently, the place is determined by the Admin in the order they were added.
 
This makes it difficult for users to browse places.

There's indeed a file in the MP to add venues 
 

If by place you mean VENUE, there's another resource in marketplace to add venues in front end. Search for venues.

It's a fact that the average web page keeps getting heavier.
Users have more and more new phones with new features and their photos and files are getting bigger and heavier.
Is there any option to set image optimization?
User adds a picture to the post, but before the picture is displayed, there is automatic optimization and image compression?
Are there plugins for any services that optimize on the fly or on-line?

It would be nice to be able to assign a start and end date for a commerce listing. We have a convention coming up and I’d like certain products to show up just at the beginning of the convention and magically disappear at the end of it. I’m sure there are many other uses to a start / stop date. I know I can put the stock at 0 until the date, but with multiple products, that is not a very practical solution.
Anyone else agree with the feature?

Automatically resize / optimize images served to the client to improve page speed. Convert images / gifs to most efficient format. This should be a core feature if it's not already. 
Nginx offers a module called "image_filter" which would accomplish this, but having it added as a core feature if IPB would be much easier!

I didn't find anything from here.  I got ImageMagic installed on my server and I dialed up the compression a bit, but that's only for new files, so it does nothing for the gigs of old files I have.
