So I was viewing my forum with a test account and I noticed that whatever threads I edited with my administrator account and even though I checked the box to not show that thread or post has been edited but my dummy account is still able to see that I edited. Any ideas?

It will appear regardless what you set if you enabled edit history. 

It will also show to some people, regardless. For example moderators will see this. We would need examples in which to take a look at, in order to advise further

That’s the thing it’s showing to regular members that don’t have access to see that a thread or post was edited by an admin. What kind of example do you need? Thanks

I would need a link to the topic, and the name of a user who you believe shouldnt be able to see this

We would need to look further into this for you, however the access details on file appear to be incorrect or missing. Could you please update these details by visiting your client area, selecting the relevant purchase, then clicking "Review/Update Access Information" under the "Stored Access Information" section.
