Signatures are disabled on my community, yet there's still a signature field on a member profile.  

This is a member group permission or the profile permission, toggle either one off if needed to remove this.

It is toggled off, which is why I'm confused.  

Profile settings > enable signatures is DISABLED.  

Not reproducible here - is this on a specific theme?

It's on a color variant of the IPS default but I'll have to check tonight on the default.

Mmmm, now I can't find any signature field.  

I've the signatures disabled by default since the beginning of 4.0 but I remember seeing a signature fieldast night on the user profile or ACP member > user data.  I'll need to be on my desktop to fully investigate.
