Or would it be best just to create a page, with details and links to the other store?

You can charge a commission if you want. It will work just like the Marketplace here on Invision Community. They will need to request a pay-out once a week for you to send them earnings. If Physical = No. IP.Commerce does not allow third-parties to list their physical products or subscriptions for sale. If you require the sell of physical products by your sponsor, then you will need to investigate third-party options like Sales Portal Pro by @newbie LAC or Classifieds by @InvisionHQ

I mean you can add the products and put them “out of stock” so they can’t be bought on your site and then add a link to the external store, but that’s not really a nice solution.

Nice way would be to just link it in the description and use a custom.css code to hide the purchase form etc, but that will depend if he has his own items in stock too
