As much as I like the extra ad revenue from people clicking back to the forum to unsubscribe, I'd rather not annoy people. As for the topic itself I believe you can (at least until it's implemented as standard) add it manually into the email template. Also, to make this even clearer, I don't believe there is a way to unsubscribe via a link. You can link a member to the notifications tab in the profile and they can manually turn off their notifications.
