We'd like to add Discord to our list of social profiles, where is this information stored?
 

Menu is System -> Settings -> General Configuration

The information is ultimately stored in a setting, but I'm afraid it's not as easy as just "adding discord". The actual front-end social profile icons are generated using Font-Awesome which does not have a Discord icon, so the small circle will appear broken. Further, if you include your social profile links in your emails then you would need to add a .png icon for Discord under applications/core/interface/email/ , and you would also need to edit your CSS to include the appropriate CSS to style the button.

In short - you can't really (easily) add support for new services yourself here I'm afraid.

I'm cooking something up to help with this - if anyone is interested then the first person to contact me via PM can beta test the plugin.
