Hi all, 

Is it possible to rename the 'Staff' page? and if so please could you point me in the right direction.

If you mean the staff directory then I think it's: acp > customisation > languages > [edit] > staff_directory

I loved how simple that sounded.. but no cigar I am afraid. no settings 'that I can see' :-(

Okay, that worked for me, perhaps I misunderstood what you were trying to do.

I would like to re-name the default 'staff directory' to that its called Instructors, instead. 

When I follow your suggested path, I seem to end up at a page with 'English US.' and the option to Add another language.. 

It's highly likely that I am missing something, and that you are entirely correct. but at the moment, it's not working for me.

You're nearly there. Where you have the language name, click the globe icon to do the customising. There's the problem, though, that you'd need to know which of the various strings "staff" is the one you want to change.

For this particular request, I would think you'd be better off using the Quick Translating tool:
