I couldn't find any documentation on this but what does the Void Account button do in Commerce?

It appears in Customer View, below Primary Billing Address.

It does a number of things:

1. Cancel all invoices.
2. Resolve all support requests.
3. Ban the account.
4. Add a note indicating why the account was voided.
5. Void or refund all transactions.
6. Cancel all billing agreements.
7. Cancel all purchases.

All of these are elective, so you decide what happens when you void an account.
