Adding a field to preferences in Members AdminCP

What class do I need to use for the hook?

I'm trying to fix an old plugin that worked on version 4.1

I gather you're trying to add a setting to the "Edit preferences" form when editing a member in the AdminCP?

You'll want to hook into \IPS\core\extensions\core\MemberForm\Preferences in that case.
