I’m wondering if uploading an attachment in chunks possible with IPS? For instance, break up uploads in say 50MB chunks.

Invision Community automatically uses HTTP chunks if the files are too large to upload in one go. It isn't something you need to worry about, the chunk size will depend on what the maximum file upload size is (and some other factors) on your web server.
