How can I make breadcrumbs different than folder structure?

For Pages, how can I make the breadcrumb path different than the folder structure?  It's common and SEO safe per Google. If I had a new site I'd pick a new folder structure but things are 10 years old.

Unfortunately, there is no out of the box option to do that. The folders automatically create the breadcrumbs.

One workaround would be to duplicate your globalTemplate and use it for the page in question, but remove the breadcrumbs entirely for this duplicated template (otherwise leaving it the same as the default globalTemplate). You could then selectively apply this template to any pages where you don't want any breadcrumbs to show.

Or, of course, you could create a custom plugin to accomplish this.
