All Activity Stream, I would like to pick Categories in that stream or would like to disable some categories on that stream????

I would like to do this as well, unfortunately it doesn't seem to be possible. It would be great if we could get this in a future update.

Create a new Content Stream in the ACP.  Select the content types / topics / forums that you want to display.  

Name it "All Activity"

Also, this limitation here too on stream creation... I am going to exclude one (1) forum from the stream but I have to pick hundreds forum to eliminate one

In the Activity Streams in ACP, you choose which one you want as default

There's a setting at the bottom.

I did that but it is not showing up on the list nor at the menu?
