We need to migrate our forum from iso-8859-1 to utf-8. Could you please help us and give us the various steps we need to perform this conversion ?

We already made this :

1) ALTER TABLE $table CONVERT TO CHARACTER SET utf8 on every tables of IPB
2) change the charset on Admin CP
3) rebuild every caches

But it doesn't work well, some parts of our community seems to be well converted (i.e. forums posts), some aren't (i.e topics titles, language translation)

You cannot simply adjust the default character set for the tables. This will not alter any data. You should use the tool in the market place at the following location http://community.invisionpower.com/files/file/2929-character-set-converter/

There are also people in the custom services directory offering this as a service.
