Are there setting somewhere to display what shows in the activity tab when you click on it? I cannot seem to find any settings or anything that relates to it? Also, I notice it shows when someone changes their profile photo, however, not when someone changes their cover photo.

Just trying to make sense of how it all works and determine if there are any settings.

The main /discover/ feed shows all content. You can’t choose what sections to show. You can however create your own feeds and your users can as well. 

The additional stuff (like “changed profile image”) can be chosen under “Activity Stream Settings” in the ACP.
