I'm trying to change the color of the top bar in the default email template.  In the Email Wrapper template it shows the style color as {setting="email_color"} but I can't figure out where to change that value in the settings.  Any advice would be appreciated.

Oh good grief, it's in the email settings.  I was looking all over the theme settings.  Hopefully this helps someone else.
