Only some forums appear on mobile list?

On desktop, you can see all our forums

 

On mobile, only some forums appear:

 

 

I cannot for the life of me find the option(s) in Admin CP to fix this?

 

Can anybody help?

Without a link to your site, can't confirm but that isn't a listing of all your forums. It's the items that are in your menu, which is managed in the Menu Manager in the ACP.
