Shows multiple colored items (Green = "Mother's Day"; Violet = "First Practice") on the same calendar?

How is this done?

Do you have to create a separate calendar for each use of color?

If yes, how are they merged to appear in one?

I can find the color editor in the Admin CP > Community > Edit Calendar, but that only allows one color.

Yes, you'll create multiple calendars and select a color for each. When you create an event you'll select which calendar it belongs to. 

By default, when you go to the calendar page it will display "all calendars" and you can change which calendar you are currently viewing by clicking the down arrow next to "All Calendars" at the top left.
