Control of the gallery image sort function

I'm just setting up my forum, and I have two key requirements for galleries:

1. Images in galleries must be in a particular order (by title) and this order has to be fixed.  The images are training slides and they need to be sequential.  I am aware that control over the default sort order isn't currently an option in the gallery set up (but is available in the album).  

2. I need to have the 'sort order' button disabled/removed when viewing a gallery, so that the order remains fixed and no other sort options can be selected by members.

Can the above be done with help from a developer, or are they impossible?  Any advice is welcomed, as this is a deal breaker for me.
