E-Mail Logging

Not sure if this has been brought up before but one thing I'd like to see is an option to log all outbound e-mails to a file. Including new registration, notification, etc e-mails. I think that would make tracking down any potential e-mail issues much easier and would also allow you to see for sure if/when notification e-mails are going out.

Note, though, this just logs the emails, it doesn't send them. But it is handy for debugging purposes.
