Better Profile Feild control

There are several fields in the profile I have no control over.
For some reason I cannot make age/birthday mandatory, not can I choose to hide or show it. Same with the email (obviously it's mandatory but where do I change who can and cannot show emails?)

Also when setting up custom profile fields, the preset AIM/YIM/ext all have custom HTML that make them clickable but what about ones I create? I would like the ability for the twitter and other social site fields I have created to be click through
