how to change these labels to Polish for example? Everything else works fine and displays in proper language.

 

As far as I know it depends on the language of the server.  But I can be wrong.

Google charts base on server language (which language btw?)? I don't think so.

Probably it is hard coded (by IPS) to English:

Google Charts supports other languages so most likely a “language” parameter isn’t working or not passed at all.
