Hello,

I want to hide a course I do not want to sell any more. However, this course cannot be "unpublished" because members paid for it and as an unpublished course, they would lose access to it.

How do I hide the course from everyone other than the users who paid for it?

At present, you cant. There is no functionality to allow for this. Please feel free to add this to our feedback area if you wish to see something like this in a future release
