Hi, in version v5, automatic hiding of longer topics was introduced. Is there a way to disable this?

I'm not quite sure what you mean by "Automatic Hiding". Do you have a screenshot?

In the main topic, some threads have such a button, and only after clicking it does the entire thread appear. Is it possible to disable this?

I'm still a little unclear. Do you mean in a quoted post?

It's the first post (the main content of the topic); when it is long, it is automatically hidden, and the "Read More" button, visible above, appears. By clicking it, we can then see the entire topic.

Unfortunately, I am not seeing this myself. Do you have a link to where you're encountering it?

It looks like when I'm on the first page of the topic, the preview is expanded, but when I'm on any other page, it's collapsed and shows "show more".

There is no way in which to change that behaviour without modification to the software at present.
