I only recently added a share photo and noticed it's change to my share photo, previously it used to be the application icon.

I prefer the application icon but seems I can't keep that if I add a share photo.

 

This would be what the particular browser/system uses for this versus what they use as a fallback if that's not available. It is not something we're telling the browser/system to use.
