There were no real REST or GraphQL changes in IC5.0

The only change is that there's a new endpoint GET /core/content which returns the content by it's class and id.

Yes, but since I am on v4 i see documentation for my version. The question was about v5.

I would think that's unlikely, to be honest. However it will indeed be available in the ACP of v5 (and already is on the beta)

Is access to Pages databases through GraphQL still planned? When rebuilding code and templates for 5.x, it would be good to use that right away.
