How do I give all tables the same db collation?

At the moment, my database seems to be a mixture of  utf8_unicode_ci,  utf8mb4_unicode_ci & utf8_general_ci collations on tables. How can I get them all to be utf8mb4_unicode_ci?

Anyone? Also, what's up wit my post date showing yesterday at 11:45pm? I posted this at least a couple of days ago?

Is this on a converted database or a brand new one?

Converted DB but the problem exists on my 3.4.7 DB as well. I want to use utf8mb4_unicode_ci  but the IPS DB converter only does utf8_unicode_ci. I wonder if their script could be modified to do utf8mb4_unicode_ci instead?
