It is possible to set anonymous post for moderation approval? not the whole forum/topic just post that were started anonymous.

Is there an option / way for us to be notified when anonymous posts are made? 
That way we could go and check it out at least as a type of "manual moderation".

There is not currently. You would need to follow the forums in question where you allow this.
