If I want to set up subscriptions but no other types of products for my platform, how much of the rest of the "Commerce" set up do I have use? 

In other words, can I disable Store, Checkout, Billing and Purchase, Support and Referrals in the applications manager in the backend (I'm on the hosted solution)?

Or are there some of these that are essential to keep turned on in order for Subscriptions to function properly?

You can disable Store, Support, and Referrals. However, the rest are still a part of Subscriptions and required to have your users facilitate purchasing a subscription.
