It is indeed in groups, on the social tab. However what you would need to do is set up another group. So your current members group, restrict to x amount, rename it to "New members" or something. Then create a new group copied from that group called members. Change that to have unlimited. Then create a promotion in Members>Group Promotions, that promotes after 10 posts

There is no access to the underlying code to change things. You can add to functionality by creating applications or adding theme hooks, depending on what you are trying to achieve.

Yes, you should be able to change a product while preserving everything on it. A standard product works in exactly the same way in terms of the payment webhooks (which is what I assume you mean here?) License keys, if you generate them, can be found in their client area. What you use those keys for is entirely up to yourself really.
