Would love to see a feature added to detect bounced emails and stop sending emails to those users. After moving to Invision, a number of old users ended up generating thousands of bounce notifications when they (somehow) got subscribed to emails they didn't get on our old platform

Charging for additional access is a pre-facebook approach, except in very specific content, it is very difficult to develop that kind of business model. I'm open to any suggestions helping me in that point.

My wife had in the past subscribed to this example of such a site: http://courtneyfosterdonahue.com/
She has a free Facebook group, and then a paid Facebook group where you get one on one time with the teacher basically.

I'd like to be able to do that, do you have some live examples?

I respectfully disagree. A very common marketing modal is to open up a free Facebook group, then plug your premium service delivered into a closed Facebook group via a PayPal link.

Invision Community can do this with better integration and more granular permissions.

These improvements are welcome, but there are a few issues that still need to be addressed.
One is regarding the ability to either disable the collection or anonymize personal data that is not critical to the software functionalities.  I'm thinking about IP address in logs, for example.  I don't know if there are other items.
Regarding cookies, I think GDPR requires affirmative user action for things like accepting cookies.  Thus, IPS should not set any cookie until it has user consent, and it should also provide an opt-out mechanism.  I believe this is not done in current version (I didn't test 4.2.7 yet).
Using embedded content also means the users may get cookies from external domains/services.  So, we need more control on the embeds that are enabled, to make sure we don't add unexpected cookies. It would also be nice to be able to rebuild posts and remove external embedded content.

That's why you can choose to make it required for admins/mods but optional for your normal members
