When creating a new forum post or article in pages, the tags selector (under the title field) shows a list of random tags that are pretty much useless. Can I delete these tags somewhere and let the user create their own tags? Or make predefined ones? I'm using the latest v5 beta.

You can create tags from the Tags section in your Admin Panel. i.e. Acp->System->Content Discovery->Tags.

By the way, where can I read e-mails sent from the "contact us" function? I just get an e-mail notification with the message that was sent, but this is sent from my own e-mail address, so I can't reply.

If you go to your Acp->System->Settings->Contact Us, you will see a setting called: Contact Us behavior. Whatever email address is set at the aforementioned setting, is the one that all emails sent through the contact us page will go to. Hope it helps.

Regarding Tags, is it possible that tags premade here .. Acp->System->Content Discovery->Tags. certain tags can only be seen and used to assigned user(s) or groups?

Tags cannot be individually assigned to groups. This would require a customization.

Would imagine this varies community to community. If you have limited tags and detail oriented users, it could be allowed for everyone. If your tag system is a little more in-depth, it may be best for staff.

I can personally vouch for this.

I have two communities. One of the communities has tags open for members and that hasn’t been a problem. In the other community, I had to move tags to the subscription plan because they were getting abused by new members.
