I'm a newbie at this since my 2300+ member Nabble forum was just converted yesterday.  But I'm surprised that each member has to choose whether or not to follow content they've created or replied to.  It would seem that it would be automatic that a member would follow his/her content, but it looks like "Automatically follow content" is set to off.  Is there a way to set it to on and then let them turn it off if they want?

You can setup the option as enabled by default in ACP. Any member who has not edited their notification setting for that specific option will have it automatically enabled after your change.
