Is there a way to hide the last visit information ? or restrict it so that only staff can see this?

Not sure. I'll follow to see if there's an answer. More curious as to why you would want this option ...

Because we have members who would prefer this information was kept private

They need to check “login anonymously”. That not only hides them from the online list, but also makes sure the latest login date is not updated anymore. 

Exactly. You can also force groups to sign in anonymously if it's important to your site.

There's no option in the AdminCP to hide the data, but you can edit theme templates to do so.
