My question is in the title: (How) Can I add contributors to an existing blog ? I know I can do that when creating the blog, but I don't see any options when the blog is already live.

When you create the blog you can only add a single user or assign certain groups. If you have chosen to have a blog with only a single author, then you can't add anybody else. If you've chosen the group option, then you need to add the new user into whichever of your groups which is allowed to contribute to the blog. You wouldn't have to make a change to Blog itself, only to the member.
