Presently there is no way to select which fields should apply to which categories when someone chooses "add new record."  
It would be very useful to be able to customise which fields are displayed on the record input form based on which category or sub-category the person is submitting the record.

Ignore me, @Ralf Herrmann has shown me it does in fact exist!
