Both should work with IPB 

I use Postfix ....

Cpanel is using Exim...

You can try both and choose the one that is better for you....

I use postfix, which sends our email traffic to our email server, which in turn runs qmail.

Neither, your MTA doesn't really matter as long as it's properly configured. What does matter in regards to ensuring proper mail delivery is keeping proper PTR records set up and things of that nature.

You could also just make use of a third party service such as Mandrill and let them handle your mail delivery so you don't have to worry about any of it.

I prefer postfix and (on some Hosts) qmail.
