Database Collation Issue.... HELP!

Hi

When my server was set up the admin set up the MYSQL database as latin1_swedish_c1.

I understand the database, tables and columns will be set this way, as will stored data.

What is the best way to convert it to UTF8 and set that as the default?

The forums are mid sized. I discovered the issue when preparing to move hosting from an apache linux set up to a windows IIS set up. During testing I received driver errors when rebuilding the html and rebuilding the skins, and when running diagnostics on database checker and database index checker I get a simple "page cannot display" message.

I don't know for sure that the collation issue is directly causing this, but I do recognise that it can be a serious issue.

Can anyone help? What queries should I run to fix this?
